
A delightfully fruity, sugar-free Gerbeaud dessert based on the harmony of sweet white chocolate - coconut flavours and the intense aroma of exotic fruits.
The base of the dessert is a classic crumbly short-crust pastry topped with a thin layer of coconut almond cream. Light citrusy passion fruit cream is layered on top and then the cake is finished with a soft white chocolate passion fruit-mango ganache, decorated with freshly grated lime zest and coconut flakes.
The cake is made with sugar-free white chocolate and maltitol.
